Pholahar is an indispensable part of Bengali culture. It finds mention in literary texts, such as the Chaitanya Charitamrita and the Chandimangala. It is believed that consuming pholahar keeps the body and mind pure during fasts or vows (brata).

Pholahar or pholar is an ancient Bengali culinary tradition that comprises of food in combination with fruits. Instead of rice or roti, it consists of milk, sweets, curd, rice derivatives, and fruits.
While seasonal fruits have always been an essential part of pholahar, they are also distinguished further as knacha and paka.

Meet the Sponge Gourd!
Locally known as Dhundul, or Palta Jhinge, this ingredient is one more from Bengal’s incredible bio diversity.
This vegetable is spotted more often in the markets as a loofah than represented on our plates as a summer delicacy. But for a short window before peak summer, the grounds come alive with this climbing vine that is resilient and versatile. And delicious! The tender Dhundul is a hard find and why we are celebrating this indigenous vegetable this season.
